The Story Behind It
Scott Sartiano is the New York hospitality heavyweight behind Zero Bond, Manhattan’s most coveted private members club, the room where Taylor Swift, Leonardo DiCaprio, and half of Hollywood have all ended up at the same bar. But the origin of his restaurant has nothing to do with celebrity or exclusivity. It starts with his grandmother’s kitchen in Naples and a Neapolitan philosophy that the best meal arrives in the center of the table and gets shared.
He launched Sartiano’s Italian Steakhouse at The Mercer Hotel in SoHo in 2023 with three-time James Beard Award winner Alfred Portale as culinary director, and New York’s food world took notice fast. The Vegas chapter opened at Wynn Las Vegas on March 4, 2026 bigger, bolder, with an expanded bistecca program that Portale himself says pushes further than anything they have done in New York. The Room
Sartiano’s earns its insider status the moment you arrive. Situated in an exclusive private alcove off the Fairway Esplanade, completely separate from the casino floor and all its energy, the restaurant overlooks the 18th hole of Wynn Golf Club and feels like a world of its own. The space flows across a bar and lounge, the main dining room, a stunning outdoor patio, and a private dining room for special celebrations. Dark wood, rich upholstery, warm lighting, the kind of room that immediately signals this is a serious, intentional dining experience. The outdoor patio is the crown jewel. On a clear evening you have a direct sightline to the Sphere glowing on the eastern horizon and the 18th green below, a combination that exists nowhere else in this city. What to Order
The menu is built for sharing, multiple dishes in the center of the table, passed around, Italian family-style. Executive chef Michael Rubinstein, a born-and-raised Las Vegan who has cooked at Momofuku, Vetri Cucina, and served as the first executive chef of the Las Vegas Raiders, runs the kitchen with that philosophy at heart. On sides, the Butternut Squash Gnocchi al Forno with Castelmagno fonduta and truffle ($25) is the one that gets reordered most. Steak add-ons, Brunello Beef Jus, Béarnaise, and Caper Salsa Verde, are all just $5 each and worth ordering all three. The Butter-Poached Maine Lobster Tail ($52) elevates any cut into a surf-and-turf worth celebrating. The Drinks
The cocktail program is the work of Mariena Mercer Boarini, Wynn Resorts’ chief mixologist and a 2026 James Beard Award semifinalist. She built it around Italian culture: Negronis, martinis, spritzes, and old-fashioned reinterpreted through Italian ingredients and technique. The Dolce Vita and the Rare Breed have quickly become the signature cocktails people rave about. The wine list is deep in Italian bottles, Barolo, Brunello, and Amarone all beautifully represented. Ordering the Fiorentina? Ask your server for a Brunello pairing. This is a room where that conversation is genuinely welcomed.
