The Hat began as a roadside stand in Alhambra, California in 1951, serving pastrami dip sandwiches to the kind of crowds that only show up when the food is genuinely good. When news broke in June 2025 that The Hat was finally crossing the state line into Las Vegas, social media reacted with what one food writer described as pandemonium. The brand’s Instagram with 53,000 followers lit up. The announcement was followed by months of construction updates, a February 2026 site visit from the Las Vegas Review-Journal, and anticipation that built steadily through spring. On May 6, 2026, The Hat opened at 6215 S. Rainbow Blvd in Spring Valley, approximately 8 miles from the Las Vegas Strip. It is the brand’s first restaurant outside of California in 75 years of operation.

The First Location Outside California in 75 Years
The Hat joining In-N-Out, Randy’s Donuts, and Silverlake Ramen as Southern California food institutions that have made the move to Las Vegas is not a coincidence. Las Vegas has become one of the most attractive expansion markets in the country for established regional brands, with a large and growing permanent population, constant tourist traffic, and a food culture that has matured enough to support concepts that do not need a casino address to draw a crowd.
