On March 28, 2026, Cantina Contramar, the first U.S. location of Chef Gabriela Cámara’s famed seafood institution, officially joined the elite collection at Fontainebleau Las Vegas.
Cámara, a global powerhouse named one of TIME’s 100 Most Influential People, has partnered with Pritzker Prize-winning architect Frida Escobedo to transport the soul of the Mexican capital to the Strip. The result is a space where modernist architecture meets the conviviality of a traditional cantina, serving up an “originals-only” menu that spans from the Pacific coast to the heart of CDMX.
The Menu: Global Icons & Vegas Exclusives
The centerpiece remains the Pescado a la Talla Contramar, a whole grilled fish painted with red adobo and green parsley rub, a dish so legendary it has inspired countless imitators worldwide. While many favorites return, Cámara has expanded the menu specifically for the Las Vegas palate, incorporating luxury “surf-and-turf” elements and tableside theater.
